The day was gorgeous here in our part of the country. I am not sure if the shade qualified as winter, but the sunshine was glorious and the wind was simply perfect, breezy and light. I spent the afternoon trying some recipes I found on Pinterest including some really terrible oatmeal pancakes, but also yummy baked oatmeal cups. I then played around with a fat-free, sugar-free cheesecake recipe I made up a few years ago. The results are in and the recipe is a winner. For supper I made stuffed bell peppers and roasted baby squash and asparagus. What a lovely way to spend the afternoon cooking and feeding the crew.

Spring is a time to renew and to grow. We often get so busy trying to accomplish our lives, we forget to take time to simply enjoy doing what we enjoy doing. I love making up recipes and feeding people. I love the windows to be open and the breeze to blow through the kitchen. I love listening to old hymns on my iPod and thinking about watching my sweet Granny Mary feed people day in and day out. I love the way the kids bring friends through the kitchen and they laugh youthfully. I love that Sundays come every seven days and lighten my heart for Monday's work.

There are so many people struggling with life. This week try to make someone have a Sunday afternoon feeling by lightening their load a little bit or giving a smile to someone who seems to be in the depths of despair. It may be seven days until Sunday, but you can enjoy a breezy day of sunshine by just being kind to someone and feeding their soul.
